The short answer

Most sushi is not vegannigiri and sashimi are fish by definition. But sushi has always included plant-based pieces, the rice itself is usually vegan, and a good counter will happily make vegetable (yasai) sushi if you ask. So "is sushi vegan?" is really "which sushi is vegan?"

The naturally vegan pieces

These traditional items are plant-based:

  • Kappa-maki — cucumber roll.
  • Kanpyo-maki — dried gourd roll (check it wasn't simmered in fish dashi; often it's fine).
  • Oshinko / takuan-maki — pickled radish roll.
  • Umeboshi & shiso — pickled plum with perilla leaf.
  • Natto-maki — fermented soybean roll.
  • Avocado and kanpyo/vegetable futomaki (ask about fillings).
  • Inari — sweet tofu pouch (usually vegan, but the age is sometimes simmered in bonito dashi — ask).

The *rice (shari) is normally just steamed rice seasoned with vinegar, sugar and salt — vegan. Some chefs add a strip of kombu* (kelp) while cooking, which is still plant-based. Soy sauce, wasabi and gari (pickled ginger) are vegan too.

What to avoid

  • Tamago — the sweet omelette; it's egg, and often contains dashi.
  • Ebi, anago, unagi, ikura, uni and all fish/shellfish nigiri.
  • Kani-kama (imitation crab) — still fish/surimi.
  • *Eel sauce (unagi no tare)* drizzled on rolls — contains fish.
  • Spicy "mayo" toppings — egg.

How to order vegan sushi

At a conveyor-belt (kaiten) shop you can simply pick the vegetable plates. At a counter, ask for yasai (vegetable) sushi and confirm no dashi in the inari or kanpyo:

ヴィーガンです。野菜のお寿司だけ、出汁なしでお願いできますか?
"I'm vegan. Could I have only vegetable sushi, with no dashi?"

Is the sushi rice vegan?

No. Imitation crab is surimi — processed fish — so it is not vegan or vegetarian.
